Miniature Lobster Poutine

Throw a little crustaceous zing into your New Year’s party with lobster poutine finger snacks.

These delectable little morsels are meant to be served as hors d’oeuvre on a large platter and are sure you be a hit at any party!

Ingredients:

1 quart vegetable oil

16 ounces cheese curds

2 pounds French fries

20 ounces of lobster meat

Gravy Ingredients:

1 ½ cups lobster stock

4 tablespoons unsalted butter

¼ cup shallots, chopped

1 tablespoon garlic, chopped

4 tablespoon flour

1 ½ teaspoon salt

¼ cup dry sherry

¼ teaspoon black pepper

¼ cup ketchup

½ cup half & half

½ pound lobster meat, finely chopped

Directions:

Begin by slicing potatoes into even slices, then place in bowl of water to soak for 30 minutes.

Next, boil lobsters in large pot until fully cooked, then remove meat from cooked lobsters and set aside.

Heat oil in large saucepan to 275 degrees F. Add the potatoes for about 5 minutes, stirring and flipping occasionally. Remove potatoes and let them drain and cool completely on a paper towel.

Heat oil to 350 degrees F. Fry the potatoes again until golden brown, normally 5 to 6 minutes. Remove potatoes and soak up excess oil with paper towel. Salt to taste.

Melt butter in saucepan, sauté shallots and garlic on low/med heat for 3 minutes. Add flour, cook 3 minutes. Whisk in stock, then add remaining ingredients, simmer 4 to 6 minutes. Puree gravy in blender.

With large tooth pick, skewer 1 French fry, 1 piece of lobster meat, and 1 cheese curd. Once these ingredients are all assembled on skewers and placed on plater, drizzle lobster gravy over everything.
